- 2 ½ teaspoons baking powder

- ¾ cup (170 g) unsalted butter, softened
- 1 ¾ cups (350 g) granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 cup (240 ml) whole milk
- 1 ½ cups (225 g) blueberries
- 8 oz (225 g) cream cheese, softened
- ½ cup (115 g) unsalted butter, softened
- 3 cups (375 g) powdered sugar
- Zest and juice of 1 large lemon
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients. Mix just until combined.
- Gently fold in the blueberries using a spatula.
- Divide the batter evenly between the pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool completely before frosting.
- To make the frosting, beat the cream cheese, butter, powdered sugar, and the zest and juice of the lemon until smooth and fluffy.
- Place one cake layer on a serving plate, spread a thick layer of frosting, then top with the second cake layer. Cover the top and sides with the remaining frosting.
- Garnish with fresh blueberries and lemon zest, if desired.
Notes
For best results, bring all ingredients to room temperature before starting. Toss blueberries in a little flour to prevent them from sinking in the batter. Ensure the cake layers are completely cool before frosting to avoid melting.
